Yes—carbon monoxide. This gas binds with meat pigments to maintain a rosy color for weeks, even if the meat is well past its prime. It’s banned in countries like Canada and Japan but still used here in the U.S.
2. That Meat Might Be Weeks Old.
Before it even hits the shelf, supermarket beef may have traveled 1,000+ miles over 5-7 days. Then it can sit on the shelf for up to two weeks. So while it looks fresh, it’s likely several weeks old by the time you cook it.
